Chickpea Patty Sandwich

Chickpea Patty Sandwich

A friend gave me this recipe for Chickpea patties that looked so good and easy to make I had to try it. You can make this for a dinner and just add a salad or vegetable and your good.
Chickpeas are high in protein and also in phosphorus, magnesium, iron and zinc
Add any roll of your choice. Works well with a french roll or pita bread

Chickpea Patties

1 15.5 ounce can chickpeas, rinsed
1/2 cup fresh flat-leaf parsley
1 cloves garlic, chopped
1/4 tsp cumin
1/4 teaspoon of sea salt ( I use Celtic Sea Salt)
1/4 teaspoon black pepper
3 tbsp. all-purpose flour
about 2 tbsp. olive oil

In a food processor, pulse all the ingredients except the flour and oil until coarsely chopped.

Form into eight 1/2-inch-thick patties, you may have a little extra liquid that needs to be squeezed out. Coat with the flour, tapping off excess.
Heat the oil in a nonstick skillet over medium-high heat. Cook the patties, until golden brown, about 3 minutes per side. Be careful flipping them over so they donโ€™t fall apart.
Place on the roll and enjoy

You can also add if you want onions, lettuce or tomato on top or skordalia sauce (here is the recipe)
