Cinnamon Bran Flax Muffins
Here is a recipe for Cinnamon bran muffins with flax seed meal your kids will love
1 1/2 cups of unbleached white flour
3/4 cup of Bob’s Red Mill flax seed meal
1 cup of brown sugar
2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 teaspoon cinnamon
1 1/2 cups finely shredded carrots
2 peeled and shredded apples
1/2 raisins (optional)
3/4 cup milk
1 teaspoon vanilla
Mix together flour, flax seed meal, brown sugar, baking soda, baking powder, salt and cinnamon in a large mixing bowl.
Stir in shredded carrots, apples, and raisins (optional). Combine milk and beaten eggs in large bowl.
Heat oven to 350F (180C) degrees and bake for 15-20 minutes.
