A friend gave me this recipe for Chickpea patties that looked so good and easy to make I had to try it. You can make this for a dinner and just add a salad or vegetable and your good.
Chickpeas are high in protein and also in phosphorus, magnesium, iron and zinc
Add any roll of your choice. Works well with a french roll or pita bread
1 15.5 ounce can chickpeas, rinsed
1/2 cup fresh flat-leaf parsley
1 cloves garlic, chopped
1/4 tsp cumin
1/4 teaspoon of sea salt ( I use Celtic Sea Salt)
1/4 teaspoon black pepper
3 tbsp. all-purpose flour
about 2 tbsp. olive oil
In a food processor, pulse all the ingredients except the flour and oil until coarsely chopped.
Form into eight 1/2-inch-thick patties, you may have a little extra liquid that needs to be squeezed out. Coat with the flour, tapping off excess.
Heat the oil in a nonstick skillet over medium-high heat. Cook the patties, until golden brown, about 3 minutes per side. Be careful flipping them over so they don’t fall apart.
Place on the roll and enjoy
You can also add if you want onions,lettuce or tomato on top or skordalia sauce (here is the recipe)
