Scrub beets clean and with a sharp knife slice them as thin as you can. Spray the pan with a light amount of olive oil. Spread them out on a cookie sheet and sprinkle with sea salt. Roast 45 minutes to 1 hour and turn over halfway through. cook till crispy.
